What’s the best part of being a butcher at The Dorking Butchery?
Building on the existing relationships with customers is a big part of the day and certainly makes the work more worthwhile! The dynamics of the team make for the best working environment I’ve ever been a part of.
What’s your favourite cut of meat & why?
My favourite cut is definitely tri-tip, cooked medium rare and sliced thinly – it’s the most flavoursome cut of beef available.
What’s your favourite recipe?
A simple stir fry with sirloin steak, a variety of vegetables cut into strips, noodles, soy and black bean sauce.

One of Leroy’s lesser known tattoos is of a dolphin jumping over a rainbow located on his lower back!
