Our Christmas Menu
Free-Range and Organic Bronze Turkey
Sourced from Will Sheffield and family, who rear award-winning turkeys on their 250-acre farm in Mayfield. Traditional methods are held in high regard at Clayton Farm, dry plucked and hung for 2 weeks to achieve exceptional flavour and tenderness in every bird.
Left to forage naturally on herbs, wild plants and open meadows in the idyllic Sussex countryside, it’s easy to see why Clayton Farm’s exceptional birds are repeat winner’s of ‘Champion Turkey’ at the South East Winter Fayre.
Locally Sourced from Surrey & Sussex
We specialise in dry-aged beef from rare and native breeds, sourced from local farms. Bringing back time-honoured techniques, our beef is matured on the bone in specially designed dry-ageing rooms for an exceptional festive roast.
The cattle are grass-fed, free from growth hormones and left to graze naturally living a healthy lifestyle, ensuring excellent marbling with rich and tender meat.
Made to Order at The Dorking Butchery
Indulge in a tender fillet steak with smooth Brussels pate and flaky puff pastry, a fantastic centrepiece on any Christmas table. Available as individual portions or made to order to suit your guests.
Traditional Three Bird Roast
Free-range succulent turkey breast, award-winning Goodman’s goose breast and locally sourced wild pheasant, layered with a choice of sausage meat and stuffing.
Boneless Turkey Crown
Tender boneless turkey breast with a choice of stuffing and sausage meat.
Award-Winning Geese and Ducks
Like our turkeys, Goodman’s geese roam in open pastures and mature naturally, foraging on wheat, barley and oats. Set over 500 acres of grassland, multi-award winning Walsgrove Farm are the top choice for chefs and butchers alike.
Free-Range Organic Lamb and Pork
If turkey isn’t your favourite and you prefer to break the norm, we have a range of traditional lamb and pork roasting joints available sourced from local farms.
Locally Sourced Wild Game
Winter brings cold weather and the start of the game season. Game pairs perfectly with the slow cooker for an excellent casserole or try a delicious roast venison haunch this year.
Ham | Gammon | Honey-Glazed Bacon
Cooked hams are ready-to eat, available plain or honey-roasted. Gammon joints available smoked/unsmoked. Honey-glazed bacon joints are ready to roast in the oven.
Pigs in Blanket | Sausage Meat
No festive feast is complete without pigs in blankets, sausage meat or chipolatas. Made using locally sourced pork from Dorking and the surrounding area.
